Pacifist, asymmetrical, brightly colored (presumably each individual has there own shellpatterns), crab-like aliens that existed 65 million years ago, the Mercora were a dying race, losing their homeworld to a black hole. They have odd "trapdoor" eyes, a three-way pincer claw, two 'hands', and can regenerate limbs (in a seemingly religious oath, they cut off a limb as an expression of grief for the loss of a comrade).
And they grow broccoli! Broccoli (and possibly vegetables in general) are aliens!

Despite they're peaceful, veggie-growing ways, the Mercora got into a war with the Nesk (alien ants able to group together into odd imitations of other creatures) on Earth, and were wiped out with the dinosaurs due to the Nesk redirecting a comet.

that crustacean alien seems to have a lot of closed trapdoor eyes, if they all open it would be startling.

This is fantastic! I had a mental block on the Mercora; I could not picture them asymmetrical to save my life, and the trapdoor eyes gave me a hard time too. This is what I'll be picturing when I go back to reread the books now!

Artistic license! =p

I interpreted "human-like" as merely meaning a hand with a thumb and fingers. And I played with the idea that the hands evolved from a crab-claw.

Nice, though it was more of a standoff. The nesk had weapons but couldn't get through the mercora's forcefields and the mercora didn't have the will or weapons or forces to fight.

Will or the weapons? If I recall correctly, one of their ships blew up one of the Nesk ships! They had weapons; they just chose not to use them.

now that I recall the mercora were peaceful and decided not to use weapons until the raid on the nesks' base.

Your imagining of the Mercora is much better than mine.

I wonder if the Crabronidae bit was intentional on K.A. Applegate's part... I kinda doubt it, but still.
